Simple CrockPot PotRoast

Well after having no rain at all, its been raining nonstop for the last week. Nothing like pot-roast on a rainy day. I've been craving it for 2 weeks now and I finally get my fix. Here's my simple recipe for yummy pot-roast in a crockpot. 




Simple Crockpot PotRoast

Makes 4-6 Servings
Ingredients:

3lb Chuck Roast
1/4 cup Nikkie's Homemade BBQ Seasoning or your Favorite Spice mix, +3 Tbsp for later
4 Tbsp Kosher Salt
3 Tbsp of EVO(extra virgin olive oil)
1 medium Red Onion
1 Large Red Bell Pepper
3-4 Mini Sweet Peppers
1 1/2 cups of chopped carrots or 12oz bag of baby carrots
4 Tbsp Whole Wheat Flour
3 Tbsp Worcestershire Sauce
3 cups of Water
3 Beef Bouillon Cubes( or 3 cups of Beef Stock)

Optional: 5-6 Medium Red Potatoes, chopped

Directions:

Spray crockpot with canola or EVO or veggie spray, turn on low. 



Thinly slice onion and peppers, set aside.




Heat pan, medium heat. Take beef chuck, season with EVO , 1 Tbsp salt, and 1/4 cup of BBQ Seasoning. Season evenly on both sides.







Sear for 3 minutes on each side. While meat is searing, add peppers, onion, carrots to crockpot. Add flour, 3 Tbsp of BBQ seasoning, 3 Tbsp of salt, Worcestershire and mix well so everything is coated. Add two cups of water.










After meat seared on both sides, add to crockpot. If your using premade beef stock add now or with pan still hot, add bouillon cubes and 1 cup of water. Cook until cubes melted, add to crockpot. 






Cook on low for 6-8 hours or on high 4-6 hours. Taste and fix seasoning if necessary. If not thick enough for you, make slurry(2 Tbsp of cornstarch and 3 Tbsp cold water) and add at end. 


Now Enjoy, I just love PotRoast.

The reason I dont put potatoes in my pot roast because, one hubby doesn't eat them and two I love mashed, or smashed, or roasted. But if you must have them, please add them. Make this recipe your own.
